Pasta With Kale and Walnut Pesto
1/3 cup plus 2 tablespoons walnuts
1 bunch kale, thick stems discarded and leaves torn (about 12 cups)
1 cup grated pecorino (2 ounces), plus more for serving
1 small clove garlic
kosher salt and black pepper
1/2 cup olive oil
3/4 pound fusilli, penne, or some other short pasta...
Directions
1.Heat oven to 350° F. Spread the walnuts on a rimmed baking sheet and toast, tossing occasionally, until fragrant, 6 to 8 minutes; let cool. Chop 2 tablespoons of the walnuts and set aside.
2.Meanwhile, bring a large pot of salted water to a boil. Add the kale and cook until bright green, 30 seconds. Transfer the kale to a colander (reserve the cooking water); squeeze dry when cool enough to handle.
3.In a food processor, combine the kale, pecorino, garlic, the remaining ⅓ cup of unchopped walnuts, ½ teaspoon salt, and ¼ teaspoon pepper. Process until finely chopped. With the machine running, add the oil through the feed tube in a steady stream.
4.Bring the reserved cooking water to a boil and cook the pasta according to the package directions. Reserve ½ cup of the cooking water; drain the pasta and return it to the pot. Add the pesto and ¼ cup of the reserved cooking water and toss to coat (add more cooking water if the pasta seems dry). Serve the pasta sprinkled with the pecorino and chopped walnuts.

Kale and Sweet Potato Gratin
5 tbsp. butter
3 garlic cloves
Kosher salt and freshly ground black pepper, to taste
1 bunch kale, stemmed and roughly chopped
3 large sweet potatoes (about 2 ½ pounds), peeled and sliced about ⅛" thick
2 cups half-and-half
2 tsp. ground cinnamon
Fresh nutmeg...
1 cup grated white cheddar
1. Preheat oven to 400°. Rub the inside of an 8"×8" baking dish with 1 tbsp. of the butter. Smash garlic with the side of a knife and sprinkle generously with salt. Chop and scrape the garlic into a mushy paste.
2. Combine garlic paste, kale, potatoes, half-and-half, cinnamon and remaining 4 tbsp. butter (cut into ½" pieces) in a pot; stir. Season with salt and pepper and taste the creamy liquid—it should be seasoned generously. Grate in a hint of nutmeg. Bring to a boil over medium-high heat while stirring the mixture with a wooden spoon. After 8–10 minutes the potatoes will be a little tender, and their starch will have thickened the liquid considerably.
3. Transfer the mixture to the prepared dish; smooth the top as much as possible. Cover the gratin with cheddar and bake until deeply golden brown, about 20–30 minutes. Let gratin cool and set a little before serving.

I had rented the movie so I didn't have a lot at stake. Still, I was afraid I made a grave error but I decided to give it a chance in a heart beat because I like vampire movies and others in that vein. I was busy so I could only watch it in spurts, but fangs to having it on DVD I was able to resurrect it. My mind throbbed with joy when Bela Lugosi first appeared. I would have been in - cape- able of enjoying this movie any more. It made my night glamourous!
I hope to undertake another vampire movie review soon. As soon as I stop coffin on the popcorn I shoveled in my mouth ...

* 1/2 cup extra virgin olive oil
* 1/3 cup pine nuts or walnuts
* 3 medium sized garlic cloves, minced
* Salt and freshly ground black pepper to taste
* Special equipment needed: A food processor (Check Amazon.com's sale on Cuisinart food processors.)
Method
1 Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.
2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.
Makes 1 cup.
Serve with pasta, or over baked potatoes, or spread over toasted baguette slices.

Parmesan Broth With Kale and White Beans
Broth
8 ounces cheese rinds, any paper at the ends removed
6 cups water
1 large onion, peeled and quartered
3 cloves garlic, peeled and smashed
1/2 teaspoon whole peppercorns
Handful of flat-leaf parsley
Salt, to taste...
To serve
2 to 3 ounces Tuscan kale (also known as black or lacinato kale; this is the thinner, flatter leaf variety), washed and patted dry
1 1/4 cups cooked white beans (from about 1/4 pound dried), with their cooking liquid if fresh (usually about 1 1/2 cups)
Thin slices of baguette, toasted
Olive oil and parmesan for serving
Make the broth: Bring all broth ingredients to a boil in a large pot, then reduce it to a simmer. Simmer for one hour. Pour broth through a strainer. Your yield should be approximately 4 1/2 cups. You can use this right away or cool it before storing it.
Turn the broth into soup: Prepare kale by removing tough stems and center rib (I often use kitchen shears for this), then cutting the leaves into thin ribbons. Add them to the broth, along with the beans. Add bean cooking liquid if you wish; this not only stretches the intense parmesan broth further but adds a gorgeous extra depth to the soup. Simmer ingredients together for 10 minutes, until kale leaves wilt and beans are warmed through.
To serve: Ladle a small amount of beans, kale and broth into a bowl. Top with a slice of toasted baguette. Drizzle baguette and soup lightly with your favorite olive oil and grate some fresh parmesan cheese over. Eat immediately.

Make the broth: Bring all broth ingredients to a boil in a large pot, then reduce it to a simmer. Simmer for one hour. Pour broth through a strainer. Your yield should be approximately 4 1/2 cups. You can use this right away or cool it before storing it.
Turn the broth into soup: Prepare kale by removing tough stems and center rib (I often use kitchen shears for this), then cutting the leaves into thin ribbons. Add them to the broth, along with the beans. Add bean cooking liquid if you wish; this not only stretches the intense parmesan broth further but adds a gorgeous extra depth to the soup. Simmer ingredients together for 10 minutes, until kale leaves wilt and beans are warmed through.
To serve: Ladle a small amount of beans, kale and broth into a bowl. Top with a slice of toasted baguette. Drizzle baguette and soup lightly with your favorite olive oil and grate some fresh parmesan cheese over. Eat immediately.

Creamy Cauliflower Curry Soup
Ingredients:
* 1/4 cup raw sunflower kernels
* 3 1/2 cups unsweetened almond milk, divided
* 3 teaspoons mild curry powder, divided, more to taste
* 1 cup chopped yellow onion
* 3 cloves garlic, chopped
* 5 cups (about 1 pound) cauliflower florets

Relaxation Method of the Day ...

Autogenic Phrases and Images
First, get into a comfortable position. While you are finding a good position, you will also want to loosen any tight clothing. Become as comfortable as possible.
Let your mouth drop open for a moment and move your jaw gently from side to side. Now, close your mouth slowly, keeping your teeth slightly apart. Take a deep breath. . . . Breathe in so that the air flows into your lungs and feels as though it's filling up your stomach area. Now, breathe out slowly. . . . Feel yourself floating down.
Focus your attention completely and fully on your breathing. Imagine your breathing is as automatic as the ocean waves, rolling in . . . and out . . . in . . . and out. . . . Silently say to yourself, "Breathing, smooth and rhythmic. . . ." "Breathing, smooth and rhythmic. . . ." "My breathing is effortless and calm. . . ." "Breathing, smooth and rhythmic. . . ." "My breathing is effortless and calm. . . ." "Breathing, smooth and rhythmic. . . ."
As you breathe, imagine relaxation flowing over your body, one wave after another. Feel the waves of relaxation moving through your chest and shoulders. Down into your arms. Through your back muscles. Down into your hips and legs.
With each wave of relaxation, try to feel the heaviness and warmth in your arms and your legs. Now, I want you to think, still in a passive way, about wave after wave of relaxation moving upward from your lungs in waves, up and across your face and scalp.
Your mind is becoming more passive and tranquil, and you have a placid, relaxed awareness of the feelings of relaxation throughout your body. All of the tensions and worries will slip away from you as you feel waves of relaxation flooding over you. There is a growing feeling of warmth and heaviness in your arms and legs and a passive awareness of your state of relaxation.
Remember how you imagined the waves rolling in and out to help you breathe effortlessly. Try to feel that again as you now imagine your heart beating. Silently say to yourself, "My heartbeat is calm and regular. . . ." "My heartbeat is calm and regular. . . ." "I feel very quiet, and my heartbeat is calm and regular. . . ." "My whole body is deeply relaxed and my heartbeat is calm and regular. . . ." "My heartbeat is calm and regular."
These feelings of relaxation, passivity, and peace will now become more and more profound as you concentrate on just your right hand and arm. Focus all your attention on your right hand and your right arm. In fact, just to make sure you have made mental contact with your right arm and hand, lightly touch these areas with your left hand.
While you gently stroke your right hand and arm, say to yourself, "My right arm and hand are heavy and warm; warmth is flowing into my arm and down into my hand. . . ." "My right arm and hand are heavy and warm; warmth is flowing into my arm and down into may hand. . . ." Let your left arm return to a resting position, if you have not already done so.
Continue silently to repeat to yourself, "My arm and hand are heavy and warm. . . ." "Warmth is flowing into my right arm, down to my right hand, and it feels pleasantly warm." Remember, you do not want to try to force any of these things to happen, just allow them to happen. They will occur naturally and gently as you passively, continue to focus on your right arm and hand and the feelings of heaviness and warmth. "My right arm is heavy and warm. . . ." At this time, carefully study the feelings in your arm and hand and attend to the feelings of heaviness and warmth. You may use any thought you care to in order to imagine your right arm and hand becoming warm. You can imagine that they are in warm water or that the warm sun is beating down on them. Continue repeating to yourself: "My right arm and hand are heavy and warm; warmth is flowing into my right arm and it feels pleasantly warm."
Now, I would like you to turn your attention to your left hand, wrist, and arm. Concentrate on this area of your body and focus all your attention there. If you need to, gently touch it as you silently repeat: "My left arm is heavy and warm; warmth is flowing into my arm and down into my hand." "My left arm and hand are heavy and warm." "Warmth is flowing down my arm and into my hand." "My left arm and hand feel pleasantly warm."
The feelings of warmth may be deepened by imaging the sun shining on your left hand and arm. Continue saying these words while focusing on your left arm and hand: "My left arm and hand are heavy and warm." "Warmth is flowing down my left arm and into my wrist and hand."

Whenever things make you nervous, whether it is meeting new people, asking your boss for a raise, or talking to large groups, you will find you can relax yourself by simply thinking the words, "I am calm." But at first, be sure to say it only when you are deeply relaxed. After practicing, you can begin to use it in everyday life.
Now as we complete this autogenic relaxation practice, take a deep breath and slowly let it out. Now, I want you to see yourself in the room where you started these exercises. Peanut Noodles with Shredded Chicken and Vegetables
(For a vegetarian version you can skip the chicken and replace them with chopped nuts, hunks of fried tofu or boiled soy beans - I try to use as much organic food as possible.)
1. 1 pound boneless, skinless chicken breasts
2. 1/2 cup smooth natural peanut butter
3. 2 tablespoons reduced-sodium soy sauce
4. 2 teaspoons minced garlic
5. 1 1/2 teaspoons chile-garlic sauce, or to taste (Chili Garlic is a tempting blend of coarsely ground chilies and garlic. There are a few brands and should be available in most stores, perhaps in the ethnic foods section.)
6. 1 teaspoon minced fresh ginger (to store ginger once it's cut, wrap in a clean white paper towel and place in a loosely folded shut plastic bag like the kind you put loose produce in at the store. Don't seal the bag tightly.)

“Lights!” we’d keep on yelling until the beams flashed on. It was usually immediate - the driver honking back thanks, or flinching embarrassed behind the steering ...wheel, or gunning past, and we’d see his red taillights blink on.
But there were times - who knows why? - when drunk or high, stubborn, or simply lost in that glide to somewhere else, the driver just kept driving in the dark, and all down the block we’d hear yelling from doorways and storefronts, front steps, and other corners, voices winking on like fireflies: “Lights! Your lights! Hey, lights!”

Since everyone liked to buy flowers from the men of God, the rival florist across town thought the competition was unfair.
He asked the good fathers to close down, but they would not. He went back and begged the friars to close. They ignored him.
He asked his mother to go and ask the friars to get out of the business. They ignored her too.
So, the rival florist hired Hugh MacTaggart, the roughest and most vicious thug in town, to "persuade" them to close.
Hugh beat up the friars and trashed their store, saying he'd be back if they didn't close shop!
Terrified, the friars did so, thereby proving that...
Hugh, and only Hugh, can prevent florist friars.
